500 grams ham ( 17.6 oz )

160 grams cubed sourdough bread ( 5.64 oz )
10 grams chopped thyme ( 0.35 oz )

270 ml heavy cream ( 9.12 fl oz )
250 ml ham water ( 8.45 fl oz )
3 minced garlic cloves
3 bay leaves
1 tablespoon plain flour ( 7.8 grams )
1/4 teaspoon salt ( 0.57 grams )
1/4 teaspoon ground black pepper ( 0.58 grams )

INSTRUCTIONS :

.in a large pot of water add 500 grams ham & 3 bay leaves
.partly cover with lid & cook for 1 hour on high heat
.once cooked save 250 ml of ham water & cut ham into shredded chunks
.in a pan on medium heat add 20 grams butter
.once melted add 170 grams sliced leek, cook for 1 minute
.add 3 minced garlic cloves, cook for 1 minute & set aside
.in a pan on medium heat add 20 grams butter
.once melted add 10 grams chopped thyme, cook for 30 seconds
.add 1 tablespoon plain flour, mix well
.add 250 ml ham water, 270 ml heavy cream & mix well
.add handful of grated parmesan, 1/4 teaspoon salt
.add 1/4 teaspoon ground black pepper & mix well
.add cooked leek, mix well & cook for 2 minutes
.butter a baking dish
.layer baking dish with sliced potatoes
.add a layer of shredded ham chunks
.add a layer of cubed sourdough bread
.sprinkle on a layer of grated mozzarella & red cheddar
.sprinkle on a layer of grated parmesan
.pour on a layer of leek sauce
.repeat the layering process
.add 1 more layer of sliced potatoes
.cover with aluminium ..

.season both sides of halved chicken breasts with salt & pepper
.coat halved chicken breasts with flour

.add chicken, cook for 3 minutes each side ( 6 minutes total )
.in a large pan on medium heat add 15 grams butter
.once melted add 1 tablespoon olive oil
.add 2 minced garlic cloves, cook for 1 minute
.add most of parsley & mix well
.add 230 ml chicken broth, 35 ml lemon juice
.add 190 ml heavy cream & mix well
.add 2 teaspoons mustard, 70 grams grated parmesan
.add 1/4 teaspoon salt, 1/4 teaspoon ground black pepper
.mix well, cook until parmesan melts
.add chicken & submerge into the sauce
.add lemon slices
