INGREDIENTS :

225 grams halloumi
1/2 medium red onion sliced & chopped
8 quartered cherry tomatoes
rocket leaves
1/8 teaspoon ground black pepper
150 ml balsamic vinegar
1/2 tablespoon olive oil

INSTRUCTIONS :

.in a pot add 150 ml balsamic vinegar
.cook on medium heat for 10 to 15 minute until reduced
.in a frying pan on medium to high heat add 1/2 tablespoon olive oil
.once heated add 225 grams halloumi, cook for 2 minutes on each side
.in a salad bowl add a 2 handfuls of rocket leaves
.sprinkle on 1/2 medium sliced & chopped red onion
.add 8 quartered cherry tomatoes

1 1/2 cup water

INSTRUCTIONS :

.in a frying on medium heat add 1 tablespoon olive oil
.once heated add 1 medium chopped onion, cook for 2 minutes
.add 3 minced garlic cloves, cook for 1 to 2 minutes
.add 1/2 teaspoon rosemary, cook for 2 minutes
.add 250 grams sliced chestnut mushrooms
.add 1/8 teaspoon salt and continue cooking until mushrooms are tender & set aside
.in same pan add 1/2 teaspoon olive oil, 150 grams bacon lardons, cook for 5 minutes
.add mushroom mixture back into frying pan
.add 400 grams chopped tomatoes in juice, 1/4 teaspoon salt
.add 1/4 teaspoon ground black pepper, 1/4 teaspoon chilli powder, 1 1/2 cup water & mix together
.add 500 grams gnocchi, 20 grams grated parmesan, mix together and cook for 2 minutes
.place in a baking dish, sprinkle 20 grams grated parmesan
.place in preheated oven 180 c / 356 f for 15 minutes
.top with pesto and sprinkle grated parmesan & ground peppercorn

.add 1/2 roasted squash, 100 ml milk & blitz until smooth
.in frying pan on low heat add blended squash, cook for 2 minutes
.add 100 grams grated mature cheddar, 50 ml gnocchi water, 1/8 teaspoon salt
.stir well and continue to simmer until cheese is melted
.in mixing bowl add cooked gnocchi, squash sauce & mix together
.add remaining roasted squash and mix together
.serve with rocket leaves and season with ground black pepper

4 egg yolks
2 tablespoons sugar
1 teaspoon vanilla extract
1 pint single cream
2 tablespoons light brown brown sugar

INSTRUCTIONS :

.in mixing bowl add 4 egg yolks, 2 tablespoons sugar
.add 1 teaspoon vanilla extract and whisk until creamy
.in a pot on medium heat add 1 pint single cream, heat until starts to boil on edges
.slowly stir cream into egg mixture
.transfer to a jug
.pour into buttered baking dishes inside a large roasting tray
.pour boiling water into the roasting tray until water reaches half the baking dishes
.cook in the preheated oven 162 c / 325 f until firm ( times may vary )
.once ready leave to chill and set for 2 to 3 hours in fridge
.once set sprinkle 2 tablespoons light brown brown sugar on top
.place in a broiler / grill on high heat until sugar caramelizes

INSTRUCTIONS :

.boil 350 grams penne pasta until soft
.in frying pan add 1 tablespoon olive oil on medium heat
.add 250 grams sliced leek and cook for 8 to 10 minutes
.add 4 minced garlic cloves and cook for 2 to 3 minutes
.lower to medium to low heat add 100 grams cream cheese and stir well
.add 100 ml milk and stir well
.add 1/4 teaspoon salt, 1/4 teaspoon ground black pepper and stir well

.stir well and cook until tender and set aside

INSTRUCTIONS :

.in frying pan add 1 teaspoon vegetable oil on medium heat
.add 400 grams minced beef, 2 chopped onions
.cook until beef is brown and onions are tender
.add 4 minced garlic cloves, 10 grams minced ginger
.add 3 chopped red chillies, 2 teaspoons turmeric
.add 2 lemongrass sticks, 5 lime leaves
.add 2 tablespoons water and stir well
.stir in 2 tablespoons plain flour
.add 250 ml coconut water, 400 ml coconut milk and stir well
.cover with lid and cook on simmer for 1 hour
.add 500 grams cubed swede and stir well
.add 60 grams tamarind paste and stir well
.cover with lid and cook for 20 minutes
.uncover and cook for 15 minutes until swede is soft
.add 3 tablespoons soy sauce and stir well
.remove from heat and leave to cool, remove lime leaves and lemon grass
.preheat oven 180 c / 356 f and roll out a short crust pastry sheet
.cut out medium size circles
.spoon filling into centre of each circle
.fold and seal the pastry
.make small hole on top of each pie
.place pies on baking tray lined with parchment paper and brush with beaten egg
.repeat process with 2nd short crust pastry sheet
.bake for 20 to 25 minutes until golden
.serve with lemon / lime slices & sweet chilli sauce

.add 450 ml skimmed milk and whisk together for a couple of minutes on low heat
.add 1/4 teaspoon nutmeg and continue whisking
.add juice of half lemon, 120 grams cream cheese
.add 100 grams grated cheddar and mix together
.pour pasta and kale into sauce mix
.add 2 tablespoons pine nuts, 1/4 teaspoon salt and stir well
.add cooked butternut squash and stir well
.place in a baking dish, add 20 grams grated parmesan

.stir well and leave to sit for approximately 10 minutes for yeast to activate

.add 1/2 teaspoon nutmeg, 1/4 teaspoon ginger powder
.add 1 teaspoon cinnamon, 1/4 teaspoon clove powder and mix together
.add 50 grams sugar and mix together
.add 50 grams butter and mix with hands until crumb consistency

.sprinkle flour on flat surface and remove dough from bowl
