INGREDIENTS :
200 grams sugar ( 7.05 oz )
270 ml water ( 9.12 oz )
500 grams Raspberries ( 17.63 oz )
juice of 1 lemon
INSTRUCTIONS :
.in a pot on low heat add 270 ml water, 200 grams sugar
.mix well until sugar dissolves
.raise to low to medium heat, simmer for 5 minutes until syrup consistency mixing occasionally
.in a bowl add 500 grams Raspberries, juice of 1 lemon
.blend until smooth
.strain through a sieve removing any seed
.mix syrup & Raspberry sauce
.place in a freezer proof container
.place in freezer until frozen & scoopable ( 6 to 12 hours )

120 grams caster sugar ( 4.23 oz )
500 grams chopped strawberries ( 17.63 oz )
450 ml double cream ( 15.21 fl oz )
2 egg whites
1 tablespoon icing sugar ( 7.81 grams )
INSTRUCTIONS :
.in a bowl electric whisk 2 egg whites until they get stiff peaks
.add 120 grams caster sugar in 3 parts
.each time whisking until stiff peaks
.with a spoon place mixture on baking tray with parchment paper
.place in preheated oven 120 c / 248 f for 75 minutes ( until meringues can slide off parchment )
.blitz 200 grams chopped strawberries until sauce consistency
.in a bowl add 450 ml double cream, 1 tablespoon icing sugar
.whisk until thick consistency
.crush 3/4 meringues
.add crushed meringues, 300 grams chopped strawberries to cream
.mix well
.stir in strawberry sauce
.serve & top with remaining crushed meringues

NOTES:
* 1 cup = 250 ml
* Rice cooker capacity = 1.8 litre or 10 cups
* Important BAKING TIPS & GUIDELINES at the end of each video
INGREDIENTS:
• 1 1/2 cup (195g) ALL PURPOSE FLOUR (do NOT pack flour in cup)
• 1 tsp (6g) BAKING SODA
• 1/2 tsp (2.5g) SALT
• 1/4 tsp GROUND NUTMEG
• 1/4 tsp GROUND CLOVES
• 1/2 tsp GROUND GINGER
• 1 tsp (3g) GROUND CINNAMON
• 2 LARGE EGGS
• 1/4 cup (60g) BROWN SUGAR (packed cup; 1/2 cup for sweeter taste)
• 1/4 cup (55g) WHITE SUGAR (1/2 cup for sweeter taste)
• 1/2 cup (115g) MELTED BUTTER
• 1 tsp (6g) VANILLA EXTRACT
• 1/2 cup (115g) SLICED BANANAS (1 large or 2 med)
• 3/4 cup (125g) SHREDDED CARROTS
• 1/3 cup (80g) DRAINED CRUSHED PINEAPPLES
• 1/2 cup (60g) CHOPPED WALNUTS
• 1/3 cup (95g) GREEK YOGURT (room temp)
HOW TO MAKE IT:
1. Whisk together flour, baking soda, salt, nutmeg, cloves, ginger and cinnamon until well combined
2. In a separate mixing bowl, whisk together eggs, sugars, butter, vanilla until incorporated
3. Add sliced bananas, grated carrots and drained crushed pineapples into the egg mixture and mix to combine
4. Add the flour mixture into the egg mixture and mix just until incorporated
5. Fold in the chopped nuts (if using) and the Greek yogurt to incorporated. Do not over mix
6. Grease pot/pan and lined with parchment paper for easy removal
7. Bake until tester comes out clean. Mine took 5 bake cycles (2.5 hr)! My new rice cooker is not consistent so it could be shorter in yours. Check after 3 bake cycles. Bake more or less until bread is done
8. Cool for 20 minutes and serve WARM!
OVEN BAKING:
Bake in greased and lined pan, in pre-heated oven of 350F (180C) for 50-60 minutes. Ovens varied so check about 60 minutes and bake longer as needed.

.once it starts to melt add 400 grams condensed milk & mix well

.place in fridge until completely cooled & firm, approximately 4 to 5 hours

200 grams strawberries ( sliced & halved ) ( 7.05 oz )
540 ml double cream ( 18.25 fl oz )
INSTRUCTIONS :
.in a large mixing bowl add 250 grams self raising flour, 1 teaspoon baking powder & mix well
.add 75 grams butter and rub together until crumb consistency
.add 43 grams caster sugar & mix well
.make a well in centre, add 1 beaten large egg
.add 60 ml milk, 1 teaspoon vanilla extract
.mix well & form into a ball ( if too sticky add some flour )
.sprinkle some flour on a flat surface, dough & rolling pin
.roll the dough evenly approximately 1/2 inch thick
.with medium circular cutter cut out circles ( 6 to 8 )
.place circles on baking tray lined with parchment paper
.place in preheated oven 180 c / 356 f for 10 to 15 minutes until risen & golden brown
.leave to cool
.in a mixing bowl add 540 ml double cream, 60 grams powdered sugar
.whisk with electric whisk until thick consistency
.once shortcake is cool slice in half
.layer with cream & spread evenly
.top with strawberry slices
.layer more cream & strawberry slices
.layer cream on top slice of shortcake & place on top
.sprinkle with powdered sugar
.top with half of a strawberry

• 2 tsp (8g) BAKING POWDER
• 1/8 tsp (1g) SALT (2-3 pinches)
• 1/3 cup (70g) GRANULE SWEETENER (monk fruit + erythritol mix)
• 4 EGGS
• 1/3 cup (80g) SOUR CREAM
• 1/4 cup (57g) MELTED BUTTER
• 2 tsp (12g) PURE VANILLA EXTRACT
• 1-2 tsp RED FOOD COLORING (to desire color)
FROSTING
• 1/2 cup (4oz/114g) CREAM CHEESE (room temp soft)

HOW TO MAKE IT:
1. Mix the dry ingredients together
2. In a separate mixing bowl, mix the wet ingredients to combine
3. Add the dry to wet and mix until smooth
4. Bake in greased/lined pot/pan until tester comes out clean. Mine took 2 Bake Cycle (60 min). Appliances varied so bake longer as needed
5. Completely cool, about 2 hours if frosting
6. Beat frosting ingredients until smooth and frost as you like
OVEN BAKING:
Bake in greased and lined pan, in pre-heated oven of 325F (160C) for 25-35 minutes. Ovens varied so check about 30 minutes and bake longer as needed

"this is the full recipe for this dessert, preheat your oven to 350 degrees
blueberry topping:
2 cups frozen, fresh blueberries
zest of 1 lemon
2 Tbsp lemon juice.
2 tsp of your choice sugar substitute
on medium low heat while crushing berries and stirring frequently cook berries to reduce juice making a thick mix. once done set aside.
crust:
pulse whole pecans in a food processor to make 2 Cups.
1/4 C your choice sugar substitute
1/2 tsp ground cinnamon
4 Tbsp melted butter.
mix well and press evenly into a lightly greased 9x13" baking dish on the bottom of the pan. set aside.
cheese cake filling:
2 (8oz ) blocks of room temperature cream cheese
2 room temperature eggs
2 tsp. of vanilla extract
1 Tbsp lemon juice
1 tsp lemon zest
1/2 C. your choice sugar substitute
mix well until fluffy and all ingredients are incorporated.
Assemble:

Lunar New Year Cookies 2023 | Almond Flour Cookies Recipe Easy | EASY RICE COOKER RECIPES
NOTES:
* 1 cup = 250 ml
INGREDIENTS:
• 2 cups (200g) ALMOND FLOUR
• 1/3 cup (40g) POWDERED ERYTHRITOL
• 1/2 tsp (3g) BAKING POWDER
• 1 EGG
• 1/3 cup (80ml) OLIVE OIL (melted butter)
• 2 tsp (12g) VANILLA EXTRACT
TOPPINGS
• ALMONDS
• CASHEWS
• SESAME SEEDS
HOW TO MAKE IT:
1. In a large mixing bowl, combine almond flour, powdered zero carb sweetner and baking powder
2. Make a well in the middle, add egg, oil and vanilla then mix until well combined and dough can be shaped
3. Divide the dough into equal pieces (mine were 47g per cookie, before baking)
4. Shape into a ball and flatten to your size. These cookies will not rise much
5. Top with nuts and anything you like. I used roasted crushed almonds, almond slices, almond sliver, whole cashew nut and sesame seeds
6. Place shaped cookies on lined pot/pan
7. Bake 10 minute in the rice cooker, DO NOT OPEN then UN-PLUG rice cooker. Let it sit for 10 minute. Uncover and let it sit another 10 minute to harden. Enjoy!
AIR FRYER BAKING:
Bake at 325F (160C) for 8 minute or longer as needed
OVEN BAKING:
Bake in pre-heated oven of 325F (160C) for about 15-25 minute until lightly brown

Pumpkin Glutinous Rice Cake | Chinese New Year Dessert Ideas | EASY RICE COOKER CAKE RECIPES
NOTES:
* 1 cup = 250 ml
* Rice cooker capacity = 1 litre or 5 cups
* Rice cooker capacity = 1.8 litre or 10 cups
* Important BAKING TIPS & GUIDELINES at the end of each video
INGREDIENTS
DOUGH
• 2 tbsp (30g) BUTTER
• 1 tbsp (10g) RICE FLOUR (regular not glutinous)
• 1/2 cup (125ml) MILK (extra as needed)
• 2 cups (250g) GLUTINOUS RICE FLOUR (sweet rice flour)
• 1 cup (250g) PUMPKIN PUREE
• 2 tbsp (20g) BROWN SUGAR
SESAME SEED MIX COATING (optional)
• 1 tbsp (10g) WHITE SESAME SEEDS
• 1 tbsp (10g) BLACK SESAME SEEDS
FILLING (optional)
Red Bean Paste (can/bag)
Roasted Coconut Peanut
(also used to top yogurt, oatmeal and ice cream)
• 1/4 cup (65g) COCONUT SUGAR/PALM SUGAR (brown sugar)
• 1/4 cup (60ml) WATER
• 1/8 tsp PANDAN/VANILLA ESSENSE (optional)
• 1 cup (90g) SHREDDED COCONUT (desiccated coconut)
• 1/4 cup (35g) CHOPPED PEANUTS
• 1 tbsp (10g) WHITE SESAME SEEDS
HOW TO MAKE IT:
1. Make slurry by cooking butter, rice flour and milk until thick and creamy; transfer to mixing bowl
2. Add 1 cup of glutinous rice flour and mix until no more white flour
3. In a separate bowl, mix pumpkin and brown sugar until combined then add to flour mixture. Mix using your hands to completely incorporate
4. Add the second cup of glutinous rice flour and mix until well combined
5. Add more glutinous rice flour and/or milk until the dough can be shaped; or consistency of play dough
6. Divide the dough into equal pieces; I divided mine into 30g per piece
7. Roll each dough into a ball then flatten it, making sure the outsides a bit thinner
8. Fill dough with 1 tablespoon of your filling and fold the outside inward, pressing it slightly to close
9. Flatten it and pinch closed any cracks
10. Lightly rub on some oil and sprinkle on 1/4 teaspoon of sesame seed (1/8 teaspoon each side); pressing the seeds into the dough. Do this for each side. Complete filling the rest of the dough pieces
11. Grease and line your pot for easy removal. Fit in as many cakes as you can and bake 30 minutes. Turn over and bake 30 more minutes
12. Enjoy them warm!
OTHER BAKING OPTIONS:
1. Air fry each side at 350F (180C) for 8 minutes or less, depending on your air fryer
2. Pan fry on low heat with 1 teaspoon of oil, turning regularly until lightly brown

• 1 1/4 cup (175g) ALL PURPOSE FLOUR
• 1 tsp (4g) BAKING POWDER
• 1/2 tsp (3g) BAKING SODA
• 1/2 tsp (2g) SALT (omit if using salted butter)
• 1/3 cup (45g) COCOA POWDER
• 4 ounce (125g) SEMI-SWEET DARK CHOCOLATE
• 7 tbsp (100g) UNSALTED BUTTER
• 1 cup (200g) SUGAR
• 1/4 cup (60 ml) OIL (used coconut oil)
• 2 tsp (12g) VANILLA EXTRACT
• 2 EGGS
• 1 tbsp (5g) INSTANT COFFEE GROUNDS (more/less to taste)
• 1 cup (250ml) BOILING HOT WATER (fresh brew coffee & skip grounds)
BUTTER CREAM CHEESE CHOCOLATE FROSTING (optional):
• 4 ounce (110g) CREAM CHEESE (room temp soft)
• 1/2 cup (115g) UNSALTED BUTTER (room temp soft)
• 1 tsp (6g) VANILLA EXTRACT
• 1/2 cup (60g) COCOA POWDER
• 2 cups (200g) POWDERED SUGAR (icing sugar)
• 2 tbsp (30g) MILK
HOW TO MAKE IT:
1. Sift together flour, baking powder, baking soda, salt and cocoa powder in a mixing bowl
2. In a large mixing bowl, melt chocolate and butter (30 second increment in microwave or over low heat) and whisk until smooth
3. Add sugar, oil, vanilla and eggs then whisk to combined
4. Add the flour mixture into the wet mixture and fold with a spatula for a few seconds
5. Add the HOT coffee and whisk slowly until smooth. You can use decaffeinated coffee or just hot water
6. The batter will be very liquidly but it will be fine
7. Pour into lined pot and bake for 3-4 bake cycles (90-120 min). Rice cooker varies so bake longer if necessary
8. Cool the pot for 1 hour before removing the cake
9. For the frosting, beat the room temperature cream cheese and butter until smooth then add the rest of the ingredients. Beat until well combined
10. Make sure the cake is completely cooled (about 2-3 hour) before frosting. ENJOY!
OVEN BAKING:
Bake in pre-heated oven of 300F (150C) for 60-70 minute. Ovens varied so bake longer as needed

• 1 cup (150g) CHOPPED APPLE (1 apple)

INGREDIENTS :
250 grams sliced guava paste ( 8.8 oz )
1 puff pastry sheet
3 tablespoons icing sugar ( 23.4 grams )
1/8 teaspoon vanilla extract ( 0.54 grams )
1/8 teaspoon sugar ( 0.52 grams )
1 egg
INSTRUCTIONS :
.in a small bowl add 1 egg, 1/8 teaspoon sugar
.add 1/8 teaspoon vanilla extract & mix together
.slice 1 puff pastry sheet into even squares / rectangles
.fork top half of pastry slices
.transfer bottom slices onto baking tray lined with parchment paper
.place 2 to 3 thin slices of guava paste in centre of each pastry slice
.brush egg mix on the edge of pastry
.place top pastry slice on top ( forked side down ) & lightly pinch together
.brush egg mix on top of pastry slices
.place in preheated oven 180 c / 356 f for approximately 10 to 15 minutes ( until golden brown )
.leave to cool for 5 to 10 minutes
.powder pastries with icing sugar through a sieve

INGREDIENTS:
• 2 cups (110g) UNSWEETENED SHREDDED COCONUT
• 1 can (12-14oz/320-398g) SWEETENED CONDENSED MILK
• 1/2 cup (115g) UNSALTED BUTTER
• 1/2 cup (100g) SEMI-SWEET DARK CHOCOLATE
• 3 EGGS
• 1 tsp (6g) VANILLA EXTRACT
• 1/2 cup (75g) ALL PURPOSE FLOUR
• 1/3 cup (30g) COCOA POWDER
• 1/4 tsp SALT (skip if using salted butter)
• 1/2 cup (70g) WHOLE ALMONDS
HOW TO MAKE IT:
1. Mix condensed milk and coconut flakes together to form a thick paste
2. Melt butter and chocolate in a mixing bowl and whisk until smooth. I melt mine in the microwave but you can also melt it in a small pot over low flame. Allow chocolate mixture to cool to warm before adding the egg mixture
3. Beat eggs and vanilla together in a small bowl then add it to the chocolate mix. Whisk to incorporate
4. Add flour, cocoa powder and salt to batter and fold together until there's no more white flour. The batter will be thick and slimy looking
5. Grease and line your pot/pan with parchment paper
6. Pour in HALF of the batter and spread it out on the bottom of the pan in one layer. Tilt and tap the pot/pan to evenly distribute
7. Scoop the coconut mixture onto the chocolate and evenly distribute over the chocolate. Press down the coconut HARD to really compact it
8. Layer the whole almonds on top and press them deep into the coconut
9. Add the rest of the batter on top, spreading it evenly over the almonds and smooth out the top
10. Bake for 2 bake cycles (60 min) and check. Rice cookers varied so bake longer as needed. Mine took 3 bake or 90 min
11. Cool completely before cutting. Enjoy!
OVEN BAKING:
Bake in greased and lined pan (could line entire pan) in pre-heated oven of 350F (180C) for 30-40 minutes. Ovens varied so check at about 35 minutes and bake longer as needed

1 cup pumpkin Puree ( 225 grams )
275 ml milk (1.16 cups )
Butter
INSTRUCTIONS :
.butter a baking dish
.make 1 layer bread slices ( crust removed, triangle halved, 1 side buttered )
.sprinkle some chopped walnuts
.make a 2nd layer bread slices ( crust removed, triangle halved, 1 side buttered )
.sprinkle the remaining chopped walnuts
.in a jug add 275 ml milk, 1 cup pumpkin Puree
.add 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon
.add 2 tablespoons white sugar, 1 1/2 tablespoon brown sugar
.add 1/8 teaspoon salt, 2 medium eggs
.whisk well
.pour mixture evenly into baking dish
.pat down to make sure bread is coated with mixture
.sprinkle with cinnamon & top with walnuts ( optional )
.Place in preheated oven 180 c / 356 f for 25 to 30 minutes

INGREDIENTS
• 1 cup (145g) WHOLEMEAL FLOUR
• 2 tsp (8g) BAKING POWDER
• 1/4 tsp SALT
• 1/4 tsp GROUND CINNAMON
• 1 tsp (3g) ORANGE ZEST
• 2 EGGS
• 1/2 cup (80g) BROWN SUGAR
• 1/2 cup (125ml) OLIVE OIL (extra virgin)
• 1/4 cup (60ml) ALMOND MILK
• 1/2 cup (60g) ALMOND MEAL (ground almonds)
• 1 cup (175g) SHREDDED BUTTERNUT SQUASH (well packed cup)
• 1/3 cup (40g) CHOPPED WALNUTS
• 1 tbsp (15g) BROWN SUGAR (topping)
FROSTING
• 1/2 cup (120g/4oz) CREAM CHEESE (room temp)
• 2 tbsp (30g) PLAIN GREEK YOGURT
• 1/3 cup (50g) POWEDERED SUGAR (icing sugar)
• 1 tsp (3g) ORANGE ZEST (optional topping)
HOW TO MAKE IT:
1. Whisk together flour, baking powder, salt, cinnamon and orange zest
2. In a separate mixing bowl, whisk eggs, brown sugar, oil, milk and shredded squash
3. Add the flour mixture into the egg mix and fold just until incorporated
4. Fold in chop walnuts
5. Grease and lined pot/pan with parchment paper then add batter
6. Top with brown sugar (optional)
7. Bake for 2 BAKE (60 min) then check. Rice cooker varies so bake longer as needed. Mine took 3 bake (90 in)
8. Cool completely, about 2 hour, if frosting
9. Beat frosting ingredients together until smooth and frost as you like
10. Top with additional orange zest
OVEN BAKING:
Bake in greased and lined pan, in pre-heat oven of 350F (180C) for 35-45 minute. Ovens varied so check after 40 minute and bake longer as needed. If your oven is too hot, you may need to turn it down and longer.

INGREDIENTS :
100 ml lime juice
zest of 3 limes
400 grams condensed milk
3 egg yolks
170 grams melted butter
300 grams hobnob biscuits
300 ml double cream
2 tablespoons icing sugar
INSTRUCTIONS :
.in a blender add 300 grams hobnob biscuits & blend until crumbled
.in a mixing bowl add hobnob crumbs, 170 grams melted butter & mix together
.place buttered crumbs into baking dish and make a smooth even base
.in a mixing bowl add 3 egg yolks & whisk for 1 to 2 minutes
.add 400 grams condensed milk & whisk for 3 to 4 minutes
.add 100 ml lime juice, zest of 3 limes & whisk for 3 to 4 minutes
.pour filling into baking dish
.tap the dish & place in preheated oven 180 c / 356 f for 15 minutes
.leave to cool for approximately 1 hour
.in a jug add 300 ml double cream, 2 tablespoons icing sugar & whisk until whipped
.with a piping bag make a cream trim on the pie
.sprinkle lemon zest on top of pie

• 3/4 cup (75g) MASHED SWEET POTATO
• 1 cup (140g) ALL PURPOSE FLOUR
• 2/3 cup (115g) WHOLE WHEAT FLOUR
• 1/2 cup (100g) CANE SUGAR
• 2 tsp (8g) BAKING POWDER
• 1/4 tsp (2g) BAKING SODA
• 1/2 tsp (3g) SALT
• 1 1/2 tsp (4g) GROUND CINNAMON
• 3/4 cup (185ml) SOY MILK (unsweetened)
• 1 tsp (4g) APPLE CIDER VINEGAR
• 1 cup (130g) DRIED CRANBERRIES

HOW TO MAKE IT:
1. Cook 1-2 large sweet potato (bake/steam/microwave/boil) and peel the skin then mashed with a fork. Measure out amount needed (if using measuring cups, packed cup and leveled)
2. In large mixing bowl, whisk together flours, baking powder, baking soda, salt, cinnamon and pumpkin pie until incorporated
3. In separate mixing bowl, combine soy milk, apple cider vinegar, coconut oil and cranberries
4. Add mashed potato and milk mixture into flour mixture, then fold just until incorporated; do not over mix. Batter should be very thick because moisture will release from potato
5. Greased or lined pot/pan then add batter. Smooth out the top
6. Bake for 2 bake cycles (60 min) then check. Rice Cookers varied so bake longer as needed. Mine took 4 bake cycles (120 min)
7. Cool for 20-30 minutes before removing from pan. Enjoy!
OVEN BAKING:
Bake in lined pan, in pre-heat oven of 350F (180C) for 50-60 minutes. Ovens varied so check about 45 minutes and bake longer as needed

• 1/4 cup (40g) BROWN SUGAR
• 1/4 cup (85g/60ml) HONEY
• 2 tbsp (30g) BUTTER

HOW TO MAKE IT:
1. Brown the white sesame; over medium heat or in rice cooker then let it cool
2. Heat sugar, honey and butter until bubbly and thick then remove from heat
3. Add browned sesame seeds into sugar mixture and mix until well combined
4. Grease two sheets of parchment papers
5. Pour sesame dough onto one sheet and spread it as much as possible; then put the second parchment paper on top and rolled flat
6. Remove top paper and sprinkle black sesame seeds evenly on top (if using)
7. Cover with the parchment paper and roll it again. You can use rolling pin or round jars/bottles
8. Grease your knife and cut into squares or rectangle bars. Enjoy!

Thai Tea Dessert Recipes | How To Make Leche Flan In Rice Cooker | EASY RICE COOKER RECIPES
INGREDIENTS:
THAI TEA BREW
• 4 tbsp (25g) THAI TEA LEAVE
• 1 cup (250ml) HOT BOILING WATER
CARAMEL
• 1/3 cup (60g) CANE SUGAR (or brown sugar)
• 2 tbsp (30g) WATER
FLAN
• 2 EGGS
• 1 tsp (6g) VANILLA EXTRACT
• 1 1/4 cup (310ml) EVAPORATED MILK
• 1/4 cup (60ml/75g) SWEETENED CONDENSED MILK
• 1/4 cup (60ml) BREWED THAI TEA
HOW TO MAKE IT:
1. Brew Thai tea by adding hot water and let it steep for 15 minutes or longer
2. Caramelized the sugar and water in a baking pan; that will fit inside of your rice cooker inner pot. Do this over stove top with medium heat or inside the rice cooker heating pad (see video). If using a separate non-stick pot/pan to caramelize the sugar, quickly pour it into the baking pan while it is still very hot. This will harden fast
3. Whisk together the flan ingredients until well mixed
4. Slowly pour flan batter through a fine mesh sieve, into the baking pan, staying as low to the caramel as possible. This remove larger chunks and prevent too much bubbles
5. Cover baking pan with aluminum foil
6. Place a trivet inside the rice cooker inner pot and pour in 1 cup (250ml) of water
7. Place the baking pan on top of the trivet, cover and press COOK/ON
8. The rice cooker will stay on COOK status until the water is completely evaporated. My rice cooker takes about 20 minutes for this process. So, set a timer or watch closely
9. Once it goes into WARM status, do NOT open the rice cooker pot. Just UNPLUG the rice cooker and let it sit for 30 minutes. Then check the flan. Mine didn't seem cooked or set after one bake cycle so I did another bake cycle. Rice cookers do varied so you may need to do this two or three times
10. After the flan is cooked (set or top loosen from sides), let it cool completely at room temperature then chill for 4 hours or more
11. Loosen the sides with a knife or spatula and flip it onto a serving plate. Enjoy!
STOVE TOP STEAM:
Steam for 45 minutes then check. Steam longer as needed
OVEN BAKING:
1. Pre-heat oven to 350F (180C)
2. Carefully place a pan of hot boiling water on the lower rack of your oven
3. Then place the flan pan on the next rack up. OR place flan pan inside a bigger baking pan; then pour hot boiling water into the bigger baking pan; about 2 inches. Make sure the water do not spill into the batter pan. Place this into the oven
4. Bake for 45-60 minutes. Ovens varied so check about 45 minutes and bake longer as needed

• 3/4 cup (90g) RICE FLOUR (not glutinous rice flour)
• 1/2 cup (70g) CUBED PURPLE SWEET POTATO (cooked)
• 2 tbsp (15g) CUBED PURPLE SWEET POTATO (cooked)
HOW TO MAKE IT:
1. Peel, slice and cubed enough potatoes for the recipe. Cook the potatoes in the microwave, steamer or boil in pot then cool
2. Make sure eggs are at room temperature and wipe utensils with lemon juice or vinegar. Separate 3 medium or large eggs, making sure to not get any yolk in your egg whites. These steps will help the egg whites to whip up faster
3. Puree 1/3 cup of sweet potato, egg yolks, coconut oil, coconut milk and salt until smooth
4. In large mixing bowl, beat egg whites for 30 seconds then add the cream of tartar (or lemon juice/vinegar). Beat another 30 seconds
5. Add half of the sugar, beat 30 seconds. Add all the sugar and beat until stiff peak, about 2-4 minutes
6. Pour the potato puree mixture into a mixing bowl and add the taro extract and food coloring (if using). Fold in the rice flour until the batter is smooth, about 1 minute
7. Add 1/3 of the whipped egg whites into the batter and slowly fold until well combined
8. Pour the potato batter into the whipped egg whites and slowly fold in one direction; scraping sides, cutting through the middle until incorporated; about 2 minutes
9. Fold in the cubed sweet potato
10. Pour into lined pot/pan and tap a few times to distribute batter and release bubbles
11. Top with additional cubed potato and cover with a paper towel to catch condensation
12. Bake for 2 bake cycles and check. Rice cookers varies so bake longer as needed
13. Cool 30 minutes the loosen the side with a spatula or knife to remove your cake. Enjoy!
OVEN BAKING:
1. Pre-heat oven to 350F (180C) with a pan of hot water on the bottom rack
2. Pour batter into a lined pan and place on middle rack of oven
3. Bake for 35-50 minutes until tester comes out clean. Ovens varied so check around 40 minutes and bake longer as needed

30 grams chopped walnuts
275 ml milk
1 1/2 tablespoons brown sugar
1/2 tablespoon sugar
1 teaspoon cinnamon
2 teaspoons lemon zest
1 egg + 1 egg yolk
INSTRUCTIONS :
.remove crust, half slice & butter 10 slices of bread on one side
.place 10 half slices in buttered pie dish butter side up
.sprinkle 15 grams raisins evenly
.sprinkle 15 grams walnuts evenly
.sprinkle 1/2 teaspoon cinnamon
.sprinkle 1 teaspoon lemon zest
.repeat these steps to make second layer
.in jug add 275 ml milk, 1 egg + 1 egg yolk,1 1/2 tablespoons brown sugar
.add 1/2 tablespoon sugar and mix together
.pour over dish coating the bread
.lightly press the bread down with spatula
.place in preheated 180 c / 356 f for 20 to 30 minutes

INGREDIENTS:
• 1 cup (275g) CREAMY PEANUT BUTTER
• 1/2 cup (100g) SEMI-SWEET CHOCOLATE (chips/rounds/chunks)
• 1/2 cup (115g) UNSALTED BUTTER
• 1/4 cup (50g) SUGAR (1/2 cup for sweeter)
• 1/2 cup (80g) BOB'S RED MILL GF 1 to 1 BAKING FLOUR (or 1/2 cup APF)
• 1/4 cup (25g) ALMOND FLOUR
• 1/2 tsp (3g) BAKING POWDER
• 1/4 cup (25g) COCOA POWDER
• 1/4 tsp SALT (omit if using salted butter)
• 2 EGGS
• 1 tsp (6g) VANILLA EXTRACT
• 1 tbsp (15g) CHOPPED PEANUTS (optional)
HOW TO MAKE IT:
*** IMPORTANT! Prepare peanut butter filling in advance, to allow at least 4 hours or more to freeze ***
1. Melt peanut butter in the microwave or over stove top until runny
2. Lined plate/pan/pot (that will fit inside of your baking pot/pan) with parchment or baking paper; then pour in melted peanut butter. Spread evenly on the bottom
3. Freeze it for at least 4 hrs or longer (I froze mine over night)
4. Melt chocolate and butter in microwave or over stove top the remove from heat
5. Add sugar and stir to melt then set it aside to cool for 15 minutes
6. In a large mixing bowl, mix flours, baking powder, cocoa powder and salt until combined
7. Add eggs and vanilla extract to slightly cooled chocolate and whisk to combined
8. Pour the chocolate mix into the flour mixture and fold until incorporated
9. Lined baking pot/pan with parchment paper and add half of the batter; distribute and flatten evenly on the bottom
10. Remove frozen peanut butter and be sure to remove the parchment paper then place it on top of the batter
11. Add the rest of the batter then smooth out the top. Sprinkle with chopped peanuts
12. Bake for 2 bake cycles (60 min) or longer as needed
13. Let it cool for 3-4 hours to completely set before cutting
OVEN BAKING:
Bake in lined pan, in pre-heated oven of 350F (180C) for 30-40 minutes until tester comes out clean. Ovens varied so test about 35 minutes and bake longer as needed

INGREDIENTS :
4 egg yolks
2 tablespoons sugar
1 teaspoon vanilla extract
1 pint single cream
2 tablespoons light brown brown sugar
INSTRUCTIONS :
.in mixing bowl add 4 egg yolks, 2 tablespoons sugar
.add 1 teaspoon vanilla extract and whisk until creamy
.in a pot on medium heat add 1 pint single cream, heat until starts to boil on edges
.slowly stir cream into egg mixture
.transfer to a jug
.pour into buttered baking dishes inside a large roasting tray
.pour boiling water into the roasting tray until water reaches half the baking dishes
.cook in the preheated oven 162 c / 325 f until firm ( times may vary )
.once ready leave to chill and set for 2 to 3 hours in fridge
.once set sprinkle 2 tablespoons light brown brown sugar on top
.place in a broiler / grill on high heat until sugar caramelizes

• 1 cup (130g) CHOPPED APPLES
• 1 tsp (2g) LEMON JUICE
• 3/4 cup (105g) WHITE BREAD FLOUR
• 1/4 cup (37g) WHOLE WHEAT FLOUR
• 1 tsp (5g) BAKING POWDER
• 1/2 tsp (3g) BAKING SODA
• 1/2 tsp (3g) GROUND CINNAMON
• A Pinch of SALT
• 1 cup (260g) MASHED BANANAS
• 3 tbsp (30g) CANE SUGAR (brown sugar)
• 1/2 tsp (3g) VANILLA EXTRACT

1. Peel and chop apples to get 1 cup then add the lemon juice to prevent the apples from browning
2. Whisk together the flours, baking powder, baking soda, cinnamon and salt in a separate bowl
3. In large mixing bowl, mix mashed bananas, sugar, vanilla, and oil until combined
4. Add the flour mixture into the banana mixture and mix to incorporate
5. Fold in the apples until incorporated
6. Pour into lined pot/pan, tapping to distribute the batter
7. Slice one whole peeled banana the long way and layer it on top
8. Sprinkle on chopped walnuts and bake
9. Bake 2 bake cycles (60 min) and check. Rice cooker varies so bake longer as needed. Mine took 3 bake (90 min)
10. Cool 20 minutes and enjoy!

Another easy recipe that is SO TASTY! This Oreo Cake recipe is moist and soft and not dense. I could not believe how good this was. The chocolate glaze took it over the top! My version is vegan but use regular milk, cream and chocolate for non-vegan version. It is super YUMMY!

INGREDIENTS:
Cake
• 2 1/2 cup (220g) CRUSHED OREO (about 30 whole)
• 1 cup (250ml) SOY MILK (any full fat milk)
• 1/4 tsp BAKING SODA
• 1 tsp (4g) BAKING POWDER
Glaze
• 1/2 cup (125ML) COCONUT CREAM (heavy cream)
• 1/2 cup (100g) DARK CHOCOLATE (semi-sweet)
HOW TO MAKE IT:
1. Mix together crushed oreo and milk until well combined
2. Add baking soda and baking powder and mix to incorporate
3. Pour into lined pot/pan
4. Bake 2 bake cycles (60 min). Rice cooker varies so check after 1 bake and bake another cycle as needed. Mine took 2 bake
5. Cool completely, about 2 hours, if you plan to glaze it
6. For glaze, heat cream until hot but not boiling
7. Add chocolate and stir until melted
8. Cool in refrigerator for about 30 minutes to thicken
9. Once cake is cooled, pour glaze over cake. Optionally, you can place cake on a rack and glaze, like I did

Bake in greased and lined pan, in pre-heated oven of 350F (180C) for 25-35 minutes. Ovens varied so check about 25 minutes and bake longer as needed. Follow steps 5-9 above for glaze

2. Whisk together the rest of the ingredients (except the walnuts) and pour over the fruit mix in the pot/pan. Spread the batter to cover the fruit as much as possible
3. Top with the chopped walnuts and bake
4. Bake 2-3 bake cycles as needed to set. Rice cookers varied so check after 2 bake (60 min). Mine took 3 bake cycles (90 min)
5. Cool 30 minutes before serving. Serve warm or room temperature, top with ice cream or more fresh fruits

Banana Cake Recipe With Cream Cheese Frosting | Banana Dessert Ideas | EASY RICE COOKER CAKE RECIPES

INGREDIENTS:
Cake Batter
• 1/2 cup (125ml) COCONUT MILK (any full fat milk)
• 1 tbsp (15g) APPLE CIDER VINEGAR (or white vinegar, lemon juice)
• 1 1/4 cup (175g) CAKE FLOUR (or all purpose flour)
• 1 1/2 tsp (6g) BAKING POWDER
• 1/2 tsp (3g) BAKING SODA
• 1/2 tsp GROUND CINNAMON
• 1/4 tsp SALT (skip is using salted butter)
• 1/3 cup (75g) UNSALTED BUTTER (room temp)
• 1/4 cup (50g) SUGAR
• 2 tbsp (20g) BROWN SUGAR
• 2 EGGS
• 1 tsp (6g) VANILLA EXTRACT
• 3/4 cup (195g) MASHED BANANAS
Cream Cheese Frosting
• 1/2 cup (4oz/120g) CREAM CHEESE (room temp)
• 1/4 cup (57g) UNSALTED BUTTER (room temp)
• 1/2 cup (65g) ICING SUGAR (powdered sugar)
• a pinch SALT (skip if using salted butter)
• 1/2 tsp (2g) VANILLA EXTRACT
Optional Topping
• Roasted Pecans
• Roasted Walnuts
HOW TO MAKE IT:
1. Mix milk and vinegar together and set it aside to curdle (if not using butter milk)
2. Whisk together the flour, baking powder, baking soda, cinnamon and salt
3. In a large mixing bowl, beat butter until light and creamy; about 1-2 minutes
4. Add the sugars, eggs and vanilla extract and beat 2-3 minutes until light in color
5. Mashed 2-3 bananas and add it to the batter; beat 30 seconds to combine
6. Add 1/3 of the flour mix and 1/3 of the milk into the wet batter and beat about 10-15 seconds. Repeat until all the flour and milk are mixed in
7. Lined pot/pan and bake for 2-3 bake cycles. Mine too 3 bake (90 min). Rice cookers varied so check after 2 bake and bake longer as needed
8. Cool in pan for 30 minutes then turn onto cooling rack to cool completely (if frosting)
9. For the frosting, beat cream cheese and butter until creamy; about 1 minute. Add sugar, salt and vanilla and beat for 2 minutes until well combined
10. Frost the cake however you like. I sliced mine in half and make a two layer. Also, top with any other toppings you like. I used roasted pecans
OVEN BAKING:
Bake in greased and lined pan, in a pre-heat oven of 350F (180C) for 35-50 minutes. Ovens varied so check about 40 minutes and bake longer as needed

White Chocolate Green Tea Cookies Without Oven | St Patrick's Day Cookies | EASY RICE COOKER RECIPES
NOTES:
* 1 cup = 250 ml
* Rice cooker capacity = 1.8 litre or 10 cups
* Air Fryer = 4.2 litre

INGREDIENTS:
• 1 cup (140g) WHITE WHOLE WHEAT FLOUR (or all purpose flour)
• 1/4 cup (30g) ALMOND FLOUR
• 1/2 tsp (3g) BAKING SODA
• 2 tbsp (12g) MATCHA GREEN TEA POWDER
• 1/4 cup (35g) BROWN SUGAR (or dark cane sugar)
• 1/4 cup (50g) LIGHT CANE SUGAR (or coconut sugar)
• 1/2 cup (115g/125ml) UNSALTED BUTTER (melted)
• 1 EGG
• 1/2 cup (90g) MINI WHITE CHOCOLATE CHIPS
• 1/4 tsp GREEN FOOD COLORING (1/2 tsp if adding to whole batter)
HOW TO MAKE IT:
1. Whisk together the flours, baking soda and green tea powder
2. Mix the sugars, butter and egg until combined
3. Add the wet mixture into the dry mixture and fold until combined
4. Add 3/4 of the chocolate chips into the batter and fold to incorporate; saving 1/4 to top the cookies
5. OPTIONALLY: you can add food coloring to half or all or skip it. I think the food color cookies look better after baking
6. Cover and chill dough for 10 minutes in the refrigerator
7. Lightly grease pot/pan and lined with parchment paper
8. Divide dough into equal pieces in whatever size you like. Roll into ball and flatten then place on parchment paper. Top with left mini chocolate chips
9. Bake in rice cooker for 10-15 minutes. DO NOT open the rice cooker but unplug it and let it sit for 10 minute
10. Remove and let it cool 5-10 minutes
AIR FRYER BAKING:
Place cookie dough on parchment paper and bake at 325F (160C) for 5-8 minutes. Air fryers varied so start with 5 minutes and bake longer as need
OVEN BAKING:
Bake in pre-heated oven of 350F (180C) for 10-12 minutes; until slightly brown on top. Oven varied so check about 10 minute and bake longer as needed. Let it sit & cool on cookie sheet for 10 minutes before removing

INGREDIENTS:
Box Brownie Mix
• 1 box (400g-500g) BOX BROWNIE MIX (plain, generic)
• 2/3 cup (133g/160ml) UNSALTED BUTTER (melted)
• 2 EGGS
Cream Cheese Mix
• 1 cup (227g/8oz) CREAM CHEESE (room temp)
• 1/2 tsp (3g) VANILLA EXTRACT
• 1 EGG
Topping (optional)
• 2 tbsp (30g) MINI-CHOCOLATE CHIPS
HOW TO MAKE IT:
1. Mix box brownie per package instructions
2. Beat room temperature cream cheese until smooth, about 2 minutes. Then add vanilla and egg. Beat to combined
3. Grease pot/pan on the bottom and sides. Lay a long parchment paper in pot/pan extending onto the side. Grease the that parchment paper. Now lay another long sheet of parchment paper, crisscrossing the first one, extending to the sides. My rice cooker is very hot on the bottom so I added a third parchment paper. Third one is optional
4. Add 1/3 of the brownie mix, spread onto the bottom
5. Add half of the cream cheese mix and spread on top of brownie layer
6. Repeat the layer with another 1/3 of brownie mix, all of cream cheese mix and end with the last third of brownie mix on top
7. Sprinkle on mini chocolate chip (or nuts) then cover with paper towel
8. Bake for 2 bake cycles (60 min) and check. Brownie should be set in the center when you jiggle the pot/pan. Rice cooker does varied so bake longer as needed. Mine took 3 bake (90 min)
9. Cool completely then chill for 2 hours or over night. Enjoy!
OVEN BAKING:
Bake per box instruction, adding another 5-10 minutes or more until center is set. Ovens varied so bake longer as needed

• 1 1/2 cup (200g) ALL PURPOSE FLOUR (plain flour)
• 1 1/2 tsp (6g) BAKING POWDER
• 1/4 tsp (2g) BAKING SODA
• 1/8 tsp (2 pinches) SALT
• 1 cup (135g) MILO POWDER
• 1/4 cup (60ml) MILK (evaporated or fresh milk)
• 1/3 cup (80g) PLAIN YOGURT (unsweetened)
• 1/2 cup (125ml) MILK (evaporated or fresh milk)
• 1 tsp (6g) VANILLA FLAVORING
• 1/3 cup (75g) UNSALTED BUTTER (room temp)
• 1/4 cup (50g) SUGAR
• 1 EGG
HOW TO MAKE IT:
1. In a bowl, whisk together flour, baking powder, baking soda and salt until well combined, about 1 min
2. In a another bowl, whisk together Milo powder and 1/4 cup of milk until well combined
3. In a separate bowl, combine yogurt, milk and vanilla flavoring and set a side
4. In a large mixing bowl, beat room temperature butter and sugar until light in color, about 2-3 minutes
5. Add the egg and beat until soft and creamy, another 2 minute
6. Fold in 1/3 of the flour mix and beat 15 seconds. Add 1/3 of yogurt mixture and beat 15 seconds. Repeat alternate adding of flour and yogurt mix until all are mixed in. The batter consistency will be thick and creamy
7. Grease and line your pot/pan. Pour in half the batter, evenly distributing the batter on the bottom
8. Now pour the Milo mix on top and make sure to completely cover the batter
9. Add the rest of the batter on top of the milo mix. Using a knife or spoon handle, create zig zag waves in one direction, touching the bottom of the pot/pan. Next create zig zag across the first set of waves. Tap to even out batter
10. Cover with paper towel and bake for 2 bake cycles then check. Rice cooker varies so bake longer as needed. Mine took 3 bake cycles or 90 minutes
11. Cool 30-40 minutes in the pot/pan before removing. I put the paper towel on top to prevent the top of the cake from over drying

Please excuse the horrible cake decoration as I am not very good in this area. But the cake recipe is REALLY GOOD! It is soft, moist and crumbly with a buttery taste. The cream cheese frosting really make this cake standout. Do do not skip it, if you can get cream cheese. A great option for your Happy Valentine's Day!
Cake Batter:
• 1 cup (250ml) POMEGRANATE PUREE
• 1 tsp (6g) VANILLA EXTRACT
• 1 tsp (3g) ORANGE ZEST (zest of one orange)
• 1 cup (140g) ALL PURPOSE FLOUR (plain flour)
• 1/2 cup (75g) CAKE FLOUR
• 2 tsp (8g) BAKING POWDER
• 1/8 tsp SALT (2 pinches)
• 1/2 cup (115g) UNSALTED BUTTER (room temp)
• 1/2 cup (100g) SUGAR
• 2 EGGS
• 1/4 tsp RED FOOD COLORING (optional)
Cream Cheese Frosting:
• 1/4 cup (57g) UNSALTED BUTTER (room temp)
• 1/2 cup (4oz/130g) CREAM CHEESE (room temp)
• 1/2 cup (60g) POWDERED SUGAR (icing sugar)
• 1/2 tsp (3g) VANILLA EXTRACT
• 1 tbsp (20g) POMEGRANATE PUREE
HOW TO MAKE IT:
1. You will need about 2 fresh pomegranates for this recipe. Puree about 2 cups of pomegranate seeds; to get 1 cup of puree plus extra for the frosting. Measure out one cup and add the vanilla and orange zest and mix to combine
2. Whisk together the flours, baking powder and salt to combine
3. In a large mixing bowl, beat the butter and sugar until light in color, 3-4 minutes
4. Add add the eggs, one at a time, beating for 1 minutes each
5. Add 1/3 of the flour mixture, beat for 15 seconds then add 1/3 of the pomegranate puree; beating about 15 seconds after each add. Continue alternate adding and mixing until done
6. Add the food coloring if desire then mix to combine. If you want to make two colors, reserve 1/2 cup of batter in a separate bowl and add another 1/4 tsp of red food coloring
7. Pour half of the batter (if creating two separate colors) into a lined pot/pan and smooth it out. Drop spoon full of the darker color batter on top. Then add the rest of the batter, smoothing out to the edges, to cover the darker color batter. Tap pot/pan on the counter/table a few times to evenly distribute the batter
8. Cover with paper towel and bake for 2 bake cycles (60 min) then check. Rice Cookers varied so bake longer as needed. Mine took 3 bake (90 min)
9. Cool completely, if frosting, about 2 hrs
10. For frosting, beat butter and cream cheese for one minute. Add the sugar, vanilla and pomegranate puree. Beat until smooth and creamy, about 2-3 minutes
11. Frost cake however you like! Divide frosting to create two colors

Bake in greased and lined pan, in a pre-heated oven of 350F (180C) for 35-45 minutes. Ovens varied so check about 35 minutes and bake longer as needed

This may be the BEST BANANA BREAD EVER! It is HEALTHY with white whole wheat flour (also known as white wholemeal, pastry wheat flour, soft wheat flour) and loaded with tasty dried fruits! • 1 cup (145g) WHITE WHOLE WHEAT FLOUR (soft wheat, pastry wheat)

HOW TO MAKE IT:
1. Mix all ingredients, except flour and baking soda, in a large mixing bowl to combine
2. In a separate bowl, mix flour and baking soda together for about 1 minute
3. Add flour mixture to wet mixture and fold just until there is no more white flour
4. Pour batter into pot/pan then smooth out the top. Tap pot/pan on table/counter a few times to evenly distribute the batter
5. Bake 3 bake cycles (90 min). Rice cooker varies so check after 2 bake and bake longer as needed
6. Cool in pot for 30 minutes before removing and cutting
OVEN BAKING:
Bake in greased and lined pan in preheated oven of 350F (180C) for 35-45 minutes. Ovens varied so check about 35 minutes and bake longer as needed

This recipe is super easy and the result is quite good. Although it did take a long time to fry them in the rice cooker, I didn't heat up the house and my sesame balls didn't burn or over brown! Yeah!

INGREDIENTS:
• 1/2 cup (60g) GLUTINOUS RICE FLOUR
• 1/4 cup (55g) SUGAR
• 1/4 cup (60g/60ml) HOT WATER (almost over-flow cup)
• 1 cup + 2 tbsp (120g) GLUTINOUS RICE FLOUR
• 1/4 cup + 1 tbsp (74g/75ml) WATER (room temp)
• 3/4 cup (200g) RED BEAN PASTE (8 balls of 24g each)
• 1/4 cup (40g) SESAME SEEDS
HOW TO MAKE IT:
1. Mix 1/2 cup (60g) of glutinous rice flour with sugar and hot water. Fold until smooth and creamy, about 2-3 min. Then cover and let it sit for 5 minutes
2. After 5 minutes, add the rest of the flour and room temperature water. Fold until dough formed, about 5 minutes. Now cover and let it sit for 30 minutes
3. For the filling, shape 8 filling balls of 24 grams each; about the size of big gum ball or large marbles. Use any filling you like
4. Thoroughly wet the sesame seeds by placing it in a bowl and cover with water. Mix about 30 seconds then drained in a fine mesh strainer. Spread seeds on a paper towel, ready for use. Seed should be damp not soaking wet
5. After 30 minutes, divide the dough into eight equal pieces, 45 grams each. Shape them into balls, about the size of golf balls or ping pong balls. Keep dough cover to prevent over drying
6. Flatten each dough into a 3 inch (8cm) diameter circular shape. Place a filling ball in the middle then fold the sides over the filling, pinching the edges to seal it. Watch the video for visuals. Gently roll the dough ball between your palms until most of the seams are gone. DO NOT over roll as some area may begin to thin out
7. Gently roll the ball in the damp sesame seeds until all sides are covered with seeds. Roll it between your palms to push the seeds into the dough a bit more. Keep sesame balls covered
8. Pour enough oil into your pot or pan so to completely cover the sesame balls. Press the COOK button and wait about 5 minutes for the oil to became hot. At this point, the one button/lever rice cookers will go into WARM status. This is normal
9. Deep fry the sesame balls until cooked and light brown. During frying, rotate the sesame balls regularly to ensure all sides brown evenly.

It is difficult to bake with fruits with a lot of juice and this is no exception. Be sure to measure out the mashed fruits accordingly. And flour your fruit cubes for less dense cake. If you do not like banana? You can use one large egg in place of the banana. Let me know how you like this cake!

• 1/2 cup (125g) MASHED DRAGON FRUIT

• 1/4 cup (60ml) COCONUT OIL
• 1/2 tsp (3g) VANILLA EXTRACT
• 12 cubes (70g) DRAGON FRUITS
• 2 tbsp (20g) ALL PURPOSE FLOUR (optional: coat fruit cubes)
• 6 thin slices DRAGON FRUIT
• 1 tbsp (6g) DESICCATED COCONUT FLAKES
HOW TO MAKE IT:
1. Whisk together the flours, baking powder and salt to combined
2. Cut dragon fruit slices, cubes and mashed enough for required amount
3. Mashed one large banana and measure out amount needed
4. In large mixing bowl, whisk together mashed banana, mashed dragon fruit, sugar, oil and vanilla extract
5. Fold in the dry mixture until there is no more white flour
6. Pour batter into lined pot/pan, smooth out the top and tap a few times to distribute batter
7. OPTIONALLY: coat dragon fruit cubes with 2 tablespoons of flour. Push each cube into the batter. Cover fruit cubes with batter
8. Layer sliced dragon fruit on top
9. Sprinkle with desiccated coconut
10. Bake for 2 bake cycles and check. Rice cookers varied so bake longer as needed
11. Cool 20-30 minutes and enjoy
OVEN BAKING:
Bake in greased and lined pan, in pre-heated oven of 350F (180C) for 30-40 minutes. Ovens varied so check about 30 minutes and bake longer as needed

Apple And Pumpkin Cake Recipe | EASY RICE COOKER CAKE RECIPES
NOTES:

INGREDIENTS:
• 1 1/2 cup (200g) CHOPPED APPLES
• 1/2 tsp (3g) LEMON JUICE
• 2 tbsp (20g) BROWN SUGAR
• 1 SLICED APPLE
• 1/2 tsp (3g) LEMON JUICE
• 1/2 tsp GROUND CINNAMON
• 2 tbsp (20g) BROWN SUGAR
• 1 cup (140g) ALL PURPOSE FLOUR
• 3 tsp (12g) BAKING POWDER
• 1 1/2 tsp (4g) GROUND CINNAMON
• Pinch of SALT
• 1/2 tsp (3g) BAKING SODA
• 1/4 tsp GROUND NUTMEG (optional)
• Pinch of GROUND CLOVES (optional)
• 1 EGG
• 1/4 cup (50g) WHITE SUGAR
• 2 tbsp (20g) BROWN SUGAR
• 1/4 cup (60ml) OIL (vegetable, canola, sunflower)
• 1/2 tsp (3g) VANILLA FLAVORING
• 3/4 cup (190g) PUMPKIN PUREE
• 1/3 cup (35g) CHOPPED WALNUTS
HOW TO MAKE IT:
1. Prepare pumpkin and apples before starting with the batter. Cook and mashed pumpkins. Chop and season apples. Sliced and add lemon juice to apple slices to prevent browning
2. Lined your pot/pan and layer the apple slices on top; then sprinkle on cinnamon and brown sugar, along with 1 tablespoon of chopped walnut
3. Mix the flour, baking powder, cinnamon, salt, baking soda, nutmeg and cloves to combined
4. Beat the egg and sugars until light in color and creamy
5. Add the oil, vanilla and pumpkin puree then mix to incorporate
6. Add the dry mixture into the wet batter and beat for 30 seconds, just to combined
7. Fold in chopped apples and chopped walnuts, saving about 1 tablespoon to sprinkle onto the bottom
8. Pour in batter and bake for 3 bake cycles, about 90 minutes. Rice cooker varies so check after 2 bake and bake longer as needed
9. Cool 10-20 minutes and enjoy it WARM!
OVEN BAKING:
1. Optionally, you can layer the apple slices on top of the batter then sprinkle on the cinnamon, brown sugar and chopped walnuts.
2. Bake in greased and lined pan, in pre-heated oven 350F (180C) for 40-50 minutes. Ovens varied so check about 35 minutes and bake longer as needed

Someone gave me this Indian Diwali sweet treat call Soan Papdi. The flavor and aroma was wonderful! But it was just way to sweet for me to just eat it. So, I decided to re-use it in other ways. One easy recipe is this Indian Spiced Rice Pudding! You do not need to buy various spices to make this pudding. Enjoy is cold or warm. So good!
5 Ingredient Kheer Recipe | How To Make Indian Spiced Rice Pudding Kheer | EASY RICE COOKER RECIPES
NOTES:
* 1 cup = 250 ml

INGREDIENTS:
• 1/2 cup (100g) BASMATI RICE
• 1 cup (150g) SOAN PAPDI (well packed cup)
• 3 cups (750ml) ALMOND MILK
• 1/4 cup (32g) RAISINS/CRANBERRIES (more/less to taste)
• 1-2 cups (250-500ml) ALMOND MILK (after rice is cooked, for pudding consistency)
• 1 cup (120g) HONEY ROASTED CASHEWS (roughly chopped)
HOW TO MAKE IT:
1. Wash, rinse and drained basmati rice
2. Add soan papdi, almond milk, and raisins or cranberries. Mix just to incorporate
3. COOK until rice cooker turns into WARM status
4. Once done, stir and add 1-2 cups of milk to get the pudding consistency you like
5. Place in serving bowls and top with additional milk and honey roasted cashews, along with more soan papdi
STOVE TOP COOKING:
1. Once all ingredients are added to pot, bring the pot to boiling
2. Reduce burner to LOW, covered pot and simmer for 30-40 minutes until rice is done cooking. Be sure to stir about every 15 minutes to prevent burning at the bottom
3. Once rice is cooked, add in additional milk for your desire pudding consistency
4. Place in serving bowls and top with additional milk and honey roasted cashews

How To Make Flan In Rice Cooker | Orange Flan Recipe | EASY RICE COOKER CAKE RECIPES
NOTES:
* 1 cup = 250 ml
* My rice cooker capacity = 1 litre or 5 cups
INGREDIENTS:
Flan
• 1/2 cup (125ml) SWEETENED CONDENSED MILK
• 1/2 cup (125ml) COCONUT MILK
• 1 tsp (4g) ORANGE ZEST
• 1/4 cup (60ml) ORANGE JUICE
• 1/2 tsp (3g) VANILLA FLAVORING
• Pinch of SALT
• 4 oz (115g) CREAM CHEESE (room temp)
• 3 EGGS
• 1/4 cup (60g) ORANGE SLICES (skin/vain removed)
Caramel
• 1/3 cup (80ml) SUGAR
• 1/4 cup (60ml) ORANGE JUICE
HOW TO MAKE IT:
1. Zest your orange first then squeeze fresh orange juices for this recipe
2. In a heat safe pan that fits your rice cooker, add the sugar and orange juice. Cook it inside the rice cooker without the inner pot. Or do it over the stove top on medium heat. Do not stir if possible. My heat was not evenly distributed so I had to stir. Once deep brown, remove from heat. Tap and tilt pan to ensure the caramel coats the bottom and let it cool
3. In a mixing bowl or blender or food processor, add the flan ingredients. Mix until smooth. If there are lumps, it's fine too. It will still tastes wonderful
4. You must STEAM flan. It will not bake well in the rice cooker pot by itself. You can also steam this on the stove top on medium heat for 30-40 minutes
5. Use a trivet and add 1 cup (250ml) of water. Place your flan on and cover with foil. COOK until it turns to WARM status. Then UNPLUG IMMEDIATELY to prevent burning. Let it rest for 10-15 minutes then check. If flan is not harden or set, add another cup of water and steam again
6. After flan is set, let it cool completely for about 2 hours. Then chill it in the refrigerator for 4 hours or more before cutting
7. After it is chilled, loosen the sides and gently turn onto a serving plate. Enjoy!
OVEN BAKING:
1. Pre-heat oven to 350F (180C)
2. Carefully place a pan of hot boiling water on the lower rack of your oven
3. Then place the flan pan on the next rack up. OR place flan pan inside a bigger baking pan; then pour hot boiling water into the bigger baking pan; about 2 inches. Place this into the oven
4. Bake for 30-45 minutes. Ovens varied so check about 35 minutes and bake longer as needed

This Banana Pineapple Cake with Pecans is also called Hummingbird cake. The toasted pecans really add that nutty flavor and crunch so don't skip this step or you will be disappointed. And the cream cheese frosting is a MUST for this cake! This recipe will be on repeat as it is soooooo EASY!

Cake Base:
• 2 EGGS
• 1/2 cup (100g) SUGAR
• 1/2 cup (115g) CRUSHED PINEAPPLES (drained not squeezed)
• 1 cup (260g) MASHED BANANAS
• 1/3 cup (80ml) COCONUT OIL
• 1/4 tsp SALT
• 1/2 tsp (3g) BAKING SODA
• 1/2 tsp GROUND CINNAMON
• 2 tsp (8g) BAKING POWDER
• 1 1/2 cup (210g) ALL PURPOSE FLOUR
• 1/2 cup (60g) CHOPPED PECANS
Frosting:
• 1/4 cup (57g) UNSALTED BUTTER (room temp)
• 4 oz (130g) CREAM CHEESE (room temp)
• 1 tsp (6g) VANILLA EXTRACT
• 1/2 cup (60g) POWEDERED SUGAR (icing sugar)
• 1/2 cup (60g) CHOPPED PECANS
HOW TO MAKE IT:
1. Toast 1 1/2 cup (150g) of whole pecans, in the rice cooker until it starts to smoke a bit and browning. Or brown in the oven at 325F (160C) for 12-15 minutes. Allow to cool and roughly chop them
2. Mix together eggs, sugar, crushed pineapples, mashed bananas and oil until combined
3. Mix in salt, baking soda, ground cinnamon and baking powder just until incorporated
4. Add flour and mix for 30 seconds
5. Fold in roasted chopped pecans
6. Bake for 2 bake cycles (60 min) and check. Rice cooker varies so bake longer as needed. Mine took 3 bake (90 min)
7. Cool completely, about 2 hours, if frosting
8. For frosting, beat together butter and cream cheese until creamy then add vanilla and powdered sugar. Beat to thoroughly combined
9. Frost cooled cake and top with the rest of the pecans

Part 1 - Pastry Dough for 8 Apples/Portions
Ingredients:
Pastry Dough – Make the night before – Recipe makes 8 dough balls (for 8 apples)
• 3 cups all-purpose flour
• 1 tsp salt
• 1 cup “chilled” vegetable shortening – used 8 oz (1 stick)
• 1/3 cup ice water x 2
MAKE AHEAD DIRECTIONS
In a large bowl, whisk together the flour and salt. Using a pastry blender or two knives, cut in the shortening until the mixture is crumbly, or use your hands WITH GLOVES so that your hands don't melt the shortening.
Add 1/3 cup cold water to the center, tossing the mixture around well. Add the 2nd 1/3 cup of cold water and mix until the dough forms a cohesive mass. If the dough needs more cold water to come together, add it 1 tsp at a time, but it usually doesn't.
Divide the dough into 8 equal portions, wrap each in plastic wrap and refrigerate for at least 30 minutes, if using right away. Store all dough balls in a single layer in a large ziplock bag until ready to use.
Preferred: keep in fridge overnight

For the Apples
Cinnamon sugar amounts is way more than you need, so eyeball it. You can prep the cinnamon sugar the night before too. Keep it in a seasoning bottle for other recipes, if need be.
DO NOT SKIMP ON QUALITY BUTTER. USE REAL BUTTER.
• 8 medium Granny Smith apples – peeled and cored
• 8 tsp unsalted Kerrygold butter – 1 stick (don’t usually use all of it)
-Cut up in tiny cubes so you can smoosh the butter and cinn sugar easily down the core in layers.
• 8 tsp granulated sugar – just eyeball it
• 1-1/2 tsp ground cinnamon – just eyeball it

But I changed up the caramel sauce recipe a little bit.
-I changed the salt amounts from 1-1/2 TABLEspoon to 1-1/2 TEAspoon
-I changed the heavy cream amounts from 3/4 cup to a tad bit more than 1/4 cup
Everything else in the ingredients and in the directions, I do the same.
Since I have this caramel sauce leftover from making cheesecake bites for a family event recently, I will be using the caramel sauce drizzled over the apple dumplings rather than making a brown butter cinnamon sauce for them.
