Whatever name you want to call this dessert will not matter because it TASTES SO GOOD! The sweetness of the mango, the tartness of the plums and the hint of citrus from the lemon zest makes this dessert OVER THE TOP! You MUST try it!
Mango Plum Dump Cake | Mango Plum Cobbler | From Scratch | EASY RICE COOKER CAKE RECIPES
NOTES:
* 1 cup = 250 ml
* Rice cooker capacity = 1.8 litre or 10 cups
* Please READ Important TIPS at the end of each video
INGREDIENTS:
• 3 cups (600g) MANGOS (cubed - fresh/frozen)
• 1 1/4 cup (370g) PLUMS (cubed - fresh/frozen)
• 1 tbsp (15g) SUGAR
• 1 tsp (2g) LEMON ZEST (one lemon)
• 1 tbsp (8g) CORNSTARCH (super fine corn flour)
• 1/4 cup (65g) SOUR CREAM
• 1/3 cup (80ml) MILK
• 1/4 cup (50g) SUGAR
• 1/3 cup (75g) UNSALTED BUTTER (melted)
• 1 EGG
• 1/3 cup (45g) CORN MEAL (grainy milled)
• 1/4 cup (30g) CORN FLOUR (finely milled)
• 1 tsp (4g) BAKING POWDER
• 1/2 tsp (3g) SALT (omit if using salted butter)
• 1/3 cup (40g) WALNUTS (chopped)
HOW TO MAKE IT:
1. Mix chopped fruits with sugar, lemon zest and cornstarch. Pour into pot/pan
2. Whisk together the rest of the ingredients (except the walnuts) and pour over the fruit mix in the pot/pan. Spread the batter to cover the fruit as much as possible
3. Top with the chopped walnuts and bake
4. Bake 2-3 bake cycles as needed to set. Rice cookers varied so check after 2 bake (60 min). Mine took 3 bake cycles (90 min)
5. Cool 30 minutes before serving. Serve warm or room temperature, top with ice cream or more fresh fruits
OVEN BAKING:
Bake in greased pan, in pre-heated oven of 350F (180C) for 35-45 minutes. Ovens varied so check around 35 minutes and bake longer as needed.
