Please excuse the horrible cake decoration as I am not very good in this area. But the cake recipe is REALLY GOOD! It is soft, moist and crumbly with a buttery taste. The cream cheese frosting really make this cake standout. Do do not skip it, if you can get cream cheese. A great option for your Happy Valentine's Day!
Cake Batter:
• 1 cup (250ml) POMEGRANATE PUREE
• 1 tsp (6g) VANILLA EXTRACT
• 1 tsp (3g) ORANGE ZEST (zest of one orange)
• 1 cup (140g) ALL PURPOSE FLOUR (plain flour)
• 1/2 cup (75g) CAKE FLOUR
• 2 tsp (8g) BAKING POWDER
• 1/8 tsp SALT (2 pinches)
• 1/2 cup (115g) UNSALTED BUTTER (room temp)
• 1/2 cup (100g) SUGAR
• 2 EGGS
• 1/4 tsp RED FOOD COLORING (optional)
Cream Cheese Frosting:
• 1/4 cup (57g) UNSALTED BUTTER (room temp)
• 1/2 cup (4oz/130g) CREAM CHEESE (room temp)
• 1/2 cup (60g) POWDERED SUGAR (icing sugar)
• 1/2 tsp (3g) VANILLA EXTRACT
• 1 tbsp (20g) POMEGRANATE PUREE
HOW TO MAKE IT:
1. You will need about 2 fresh pomegranates for this recipe. Puree about 2 cups of pomegranate seeds; to get 1 cup of puree plus extra for the frosting. Measure out one cup and add the vanilla and orange zest and mix to combine
2. Whisk together the flours, baking powder and salt to combine
3. In a large mixing bowl, beat the butter and sugar until light in color, 3-4 minutes
4. Add add the eggs, one at a time, beating for 1 minutes each
5. Add 1/3 of the flour mixture, beat for 15 seconds then add 1/3 of the pomegranate puree; beating about 15 seconds after each add. Continue alternate adding and mixing until done
6. Add the food coloring if desire then mix to combine. If you want to make two colors, reserve 1/2 cup of batter in a separate bowl and add another 1/4 tsp of red food coloring
7. Pour half of the batter (if creating two separate colors) into a lined pot/pan and smooth it out. Drop spoon full of the darker color batter on top. Then add the rest of the batter, smoothing out to the edges, to cover the darker color batter. Tap pot/pan on the counter/table a few times to evenly distribute the batter
8. Cover with paper towel and bake for 2 bake cycles (60 min) then check. Rice Cookers varied so bake longer as needed. Mine took 3 bake (90 min)
9. Cool completely, if frosting, about 2 hrs
10. For frosting, beat butter and cream cheese for one minute. Add the sugar, vanilla and pomegranate puree. Beat until smooth and creamy, about 2-3 minutes
11. Frost cake however you like! Divide frosting to create two colors
OVEN BAKING:
Bake in greased and lined pan, in a pre-heated oven of 350F (180C) for 35-45 minutes. Ovens varied so check about 35 minutes and bake longer as needed
