This's definitely the best way to cook with Chinese eggplants. My vegan version of Chinese Eggplant stir-fried with TVP( aka Fish Fragrant Eggplant(yùh hēung 鱼香 ké jí 茄子), a popular eggplant dish around the globe, which is originated from Sichuan Province of China.

P.S.
