This Banana Pineapple Cake with Pecans is also called Hummingbird cake. The toasted pecans really add that nutty flavor and crunch so don't skip this step or you will be disappointed. And the cream cheese frosting is a MUST for this cake! This recipe will be on repeat as it is soooooo EASY!
Banana Pineapple Cake Recipes Easy | Pecans | Cream Cheese Frosting | EASY RICE COOKER CAKE RECIPES
NOTES:
* 1 cup = 250 ml
* My rice cooker capacity = 1 litre or 5 cups
* Please READ Important TIPS at the end of each video
INGREDIENTS
Cake Base:
• 2 EGGS
• 1/2 cup (100g) SUGAR
• 1/2 cup (115g) CRUSHED PINEAPPLES (drained not squeezed)
• 1 cup (260g) MASHED BANANAS
• 1/3 cup (80ml) COCONUT OIL
• 1/4 tsp SALT
• 1/2 tsp (3g) BAKING SODA
• 1/2 tsp GROUND CINNAMON
• 2 tsp (8g) BAKING POWDER
• 1 1/2 cup (210g) ALL PURPOSE FLOUR
• 1/2 cup (60g) CHOPPED PECANS
Frosting:
• 1/4 cup (57g) UNSALTED BUTTER (room temp)
• 4 oz (130g) CREAM CHEESE (room temp)
• 1 tsp (6g) VANILLA EXTRACT
• 1/2 cup (60g) POWEDERED SUGAR (icing sugar)
• 1/2 cup (60g) CHOPPED PECANS
HOW TO MAKE IT:
1. Toast 1 1/2 cup (150g) of whole pecans, in the rice cooker until it starts to smoke a bit and browning. Or brown in the oven at 325F (160C) for 12-15 minutes. Allow to cool and roughly chop them
2. Mix together eggs, sugar, crushed pineapples, mashed bananas and oil until combined
3. Mix in salt, baking soda, ground cinnamon and baking powder just until incorporated
4. Add flour and mix for 30 seconds
5. Fold in roasted chopped pecans
6. Bake for 2 bake cycles (60 min) and check. Rice cooker varies so bake longer as needed. Mine took 3 bake (90 min)
7. Cool completely, about 2 hours, if frosting
8. For frosting, beat together butter and cream cheese until creamy then add vanilla and powdered sugar. Beat to thoroughly combined
9. Frost cooled cake and top with the rest of the pecans
OVEN BAKING:
Bake in greased and lined pan, in pre-heated oven of 350F (180F) for 30-40 minutes. Ovens varied so check about 30 minutes and bake longer as needed
