INGREDIENTS:
1 large egg
½ tsp cinnamon
2 tsp Erythritol
1/8 tsp vanilla
1/3 butter
¼ cup almond milk, optional (I didn't use for this recipe)
4 keto bread slices (add keto bread link)

INSTRUCTIONS:
1. In a shallow bowl beat the eggs, with cinnamon, erythritol and the vanilla.
2. Soak each slice of bread into the mixture and coat them well on both sides.
3. Heat ¼ of the butter in a skillet over medium-high heat.
4. Add one of the coated slices and cook for 1 per side until golden brown.
5. Transfer this toast to the serving plate and cook the remaining soaked slices in the remaining butter for 1 minute per side
6. Garnish them with strawberry, blueberries or choc zero maple syrup.
7. Serve -fresh and enjoy.

Keto Onigiri Recipes

Ingredients.
1. 16 ounces raw cauliflower
2. 1 tablespoon soy sauce
3. 1 tablespoon unseasoned rice vinegar
4. 5 ounces cream cheese, softened
5. 5 ounces canned pink salmon*
6. 1 tablespoon mayonnaise
7. 2 sheets nori

Instructions.
1. Trim all of the leaves from the outside of the cauliflower.
2. Chop the cauliflower into chunks that are small enough to fit into your food processor.
3. Use the grate attachment to process all of the cauliflower into rice.
4. Toast the cauliflower over medium-high heat until it's steamed out most of the water.
5. Mix in the tablespoon of soy sauce and the unseasoned rice vinegar.
6. Transfer to a mixing bowl and stir in the softened cream cheese. Chill in the fridge for about half an hour.
7. Mix the canned salmon with the tablespoon of mayonnaise, set aside.
8. Divide the rice mixture into six sections. Place one of the sections onto a sheet of plastic wrap and create a well in the middle.
9. Add a tablespoon of the salmon mixture into the well.
10. Use to plastic wrap to form a ball of cauliflower rice around the salmon. One the salmon is fully enclosed, create a triangle shape.
11. Unwrap the rice and adjust the shape as needed. It's a little bit harder to work with than regular rice, so just be patient and do your best.
12. Cut the sheets of nori into thirds. Place the rice into the center of a strip of nori.
13. Fold the strips over the rice and wrap around the bottom, almost like a jacket.
14. Optionally you can garnish the top with a little flaked salmon to show what's inside. Repeat with the other five sections until you have six onigiri total.

• ½ cup jarred tomato sauce (such as Rao's®)
• ¼ cup shredded mozzarella cheese
• 1 tablespoon ghee (clarified butter)

Directions
• Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
• Slice chicken breast through the middle horizontally from one side to within 1/2 inch of the other side. Open the two sides and spread them out like an open book. Pound chicken flat until about 1/2-inch thick.
• Beat egg and cream together in a bowl.
• Combine crushed pork rinds, Parmesan cheese, salt, garlic powder, red pepper flakes, ground black pepper, and Italian seasoning in bowl; transfer breading to a plate.
• Dip chicken into egg mixture; coat completely. Press chicken into breading; thickly coat both sides.
• Heat a skillet over medium-high heat; add ghee. Place chicken in the pan; cook until no longer pink in the center and the juices run clear, about 3 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Be careful to keep breading in place.
• Transfer chicken to a baking sheet. Cover with tomato sauce; top with mozzarella cheese.
• Broil until cheese is bubbling and barely browned, about 2 minutes.

Creamy Sun Dried Tomato Basil Chicken

Ingredients

1 Tbs. ghee or butter
2 cups zucchini noodles - https://amzn.to/3eqBlSj
14.5 ounce can of coconut crème
1 Tbs. arrowroot powder
1 Tbs. lemon juice
1 tsp. sea salt
1/2 tsp. black pepper
1/2 tsp. garlic powder
1 lb cooked chicken breast, shredded
10 basil leaves
1/2 cup sun-dried tomatoes

Directions
Heat ghee or butter in a skillet set to medium.
Add zucchini noodles and sauté until soft, about 2 minutes.
Add the entire can of coconut crème and stir well.
Reduce heat to low and thoroughly whisk in the arrowroot powder.
This will thicken the sauce.
Stir in lemon juice, sea salt, pepper, garlic powder and pinch of nutmeg.
Gently stir in shredded chicken breast, basil and sun-dried tomatoes, reserving a little basil and sun-dried tomatoes to use
as a garnish.
