When the conditions are right, there’s nothing better than catching a mess of crappie. The exception might be tasting the rewards of your catch, especially if it’s a pecan-crusted recipe. It’s a dish that’s not only great for crappie and other panfish, but also catfish as well.
And it’s also easy to make.
PECAN-CRUSTED CRAPPIE –
1½ pounds of crappie (4 servings)
¾ cup chopped pecans
1 Tbsp. sesame seeds
1 clove garlic, minced
2 Tbsp. butter, melted
Salt and pepper
First, stir together the pecans and sesame seeds and set aside. Arrange fish on a baking dish. Add garlic to melted butter and brush on the fish. Cover fish with nut mixture. Salt and pepper to taste. Chill or let stand for 30 minutes. Heat oven to 400°.
Heat a small amount of olive oil in the bottom of a skillet. Sauté the fish, pecan side down, for about 5 minutes, then transfer to the oiled baking dish. When all fish are sautéd, bake with pecan side up until the meat flakes.
This is a buttery way to serve a light fish. The pecans and sesame seeds give the fish a rich flavor without all the fat.
