Banana Cake Recipe With Cream Cheese Frosting | Banana Dessert Ideas | EASY RICE COOKER CAKE RECIPES
NOTES:
* 1 cup = 250 ml
* Rice cooker capacity = 1 litre or 5 cups
* Please READ Important TIPS at the end of each video
INGREDIENTS:
Cake Batter
• 1/2 cup (125ml) COCONUT MILK (any full fat milk)
• 1 tbsp (15g) APPLE CIDER VINEGAR (or white vinegar, lemon juice)
• 1 1/4 cup (175g) CAKE FLOUR (or all purpose flour)
• 1 1/2 tsp (6g) BAKING POWDER
• 1/2 tsp (3g) BAKING SODA
• 1/2 tsp GROUND CINNAMON
• 1/4 tsp SALT (skip is using salted butter)
• 1/3 cup (75g) UNSALTED BUTTER (room temp)
• 1/4 cup (50g) SUGAR
• 2 tbsp (20g) BROWN SUGAR
• 2 EGGS
• 1 tsp (6g) VANILLA EXTRACT
• 3/4 cup (195g) MASHED BANANAS
Cream Cheese Frosting
• 1/2 cup (4oz/120g) CREAM CHEESE (room temp)
• 1/4 cup (57g) UNSALTED BUTTER (room temp)
• 1/2 cup (65g) ICING SUGAR (powdered sugar)
• a pinch SALT (skip if using salted butter)
• 1/2 tsp (2g) VANILLA EXTRACT
Optional Topping
• Roasted Pecans
• Roasted Walnuts
HOW TO MAKE IT:
1. Mix milk and vinegar together and set it aside to curdle (if not using butter milk)
2. Whisk together the flour, baking powder, baking soda, cinnamon and salt
3. In a large mixing bowl, beat butter until light and creamy; about 1-2 minutes
4. Add the sugars, eggs and vanilla extract and beat 2-3 minutes until light in color
5. Mashed 2-3 bananas and add it to the batter; beat 30 seconds to combine
6. Add 1/3 of the flour mix and 1/3 of the milk into the wet batter and beat about 10-15 seconds. Repeat until all the flour and milk are mixed in
7. Lined pot/pan and bake for 2-3 bake cycles. Mine too 3 bake (90 min). Rice cookers varied so check after 2 bake and bake longer as needed
8. Cool in pan for 30 minutes then turn onto cooling rack to cool completely (if frosting)
9. For the frosting, beat cream cheese and butter until creamy; about 1 minute. Add sugar, salt and vanilla and beat for 2 minutes until well combined
10. Frost the cake however you like. I sliced mine in half and make a two layer. Also, top with any other toppings you like. I used roasted pecans
OVEN BAKING:
Bake in greased and lined pan, in a pre-heat oven of 350F (180C) for 35-50 minutes. Ovens varied so check about 40 minutes and bake longer as needed
